Valley Rising Summer 25

For one weekend only, the region’s smallest and boldest wine and spirit producers — makers who don’t have cellar doors of their own — are coming together under one roof at Pokolbin Community Hall.

Wine Dinner at Pelicans at Beachcomber

Hosted in collaboration with De Beaurepaire Wines, this exclusive five-course dinner brings the charm of Burgundy-inspired winemaking to the Central Coast. Established in 1998, De Beaurepaire Wines is a family-owned estate in Rylstone, NSW. Inspired by their Burgundian heritage, the de Beaurepaire family pioneered the region for its limestone-rich soils and ultra-cool inland climate, producing elegant, age-worthy wines of distinction. ChaLou Wines Tasting with Nadja Wallington at The Art Syndicate
We’re delighted to welcome Nadja Wallington of ChaLou Wines for an evening celebrating the cool-climate wines of Orange, NSW, paired with bespoke food creations from Cicerone Cucina Romana. Nadja will guide guests through a selection of ChaLou’s handcrafted wines – an expression of the unique soils, elevation, and microclimates that make Orange one of Australia’s most exciting wine regions.
ChaLou is a boutique “bud-to-bottle” winery on Wiradjuri Country in Orange, founded by Nadja Wallington and Steve Mobbs. In 2025, ChaLou Wines was named Dark Horse Winery by the Halliday Wine Companion, championing the hidden gems achieving a 5-star rating for the first time. With a focus on expressing a distinct sense of time and place, Nadja will share insights into her winemaking philosophy, the story behind ChaLou Wines, and what makes Orange such a distinctive terroir for premium wine production.

IZY AKI x Small Forest Wine Dinner
Small Forest winemaker Atsuko Radcliffe will be visiting Sydney from the picturesque Upper Hunter region of the Hunter Valley. With experience producing wine in Japan, France, several Australian states, and now based in the Upper Hunter since establishing Small Forest in 2013, Atsuko is recognised for crafting wines noted for their fruit character, delicacy, and remarkable texture.
This marks the second collaboration between IZY AKI chef Darren Templeman and Small Forest's Atsuko Radcliffe. IZY AKI, a Japanese Modern Australian restaurant located in Paddington, is presenting another distinguished Omakase dinner, thoughtfully paired with Small Forest wines.
Chef Darren Templeman is committed to delivering a personalised guest experience that highlights the best of local Sydney produce. The evening promises to be an exceptional culinary event.

Join Cupitt’s Estate and Lowe Family Wines for an unforgettable evening celebrating Italian varietals grown in NSW. As part of NSW Wine Month, this special dinner brings together two of the state’s most passionate wine families, with guest chef Kim Currie of Zin House (Mudgee) collaborating on the menu.
Across six courses and six wines, you’ll explore why Italian grapes are thriving in our local terroir — from vibrant whites like Arneis, Vermentino and Fiano to soulful reds such as Primitivo, Sangiovese and Nebbiolo.
