Celebrate NSW Wine Month with a special one-night-only dinner bringing together award-winning regional dining and one of NSW’s pioneering organic wine producers.

On Friday 20 November, Mélange Bilpin and Tamburlaine Organic Wines invite you to an intimate evening of seasonal food, thoughtfully matched NSW wines and conversation with Tamburlaine Group Winemaker Shannon Burgess-Moore.

Chef Daniel Hiltbrunner has created a six-course menu showcasing the generous, seasonal style for which Mélange is known, beginning with an amuse-bouche and duck consommé before moving through charred zucchini with seasonal stone fruit and bocconcini, prawn ravioli with basil cream, smoked lamb rack with ratatouille and polenta batons, and a rosewater and raspberry panna cotta to finish.

Each course will be accompanied by wines selected from Tamburlaine’s organic portfolio, taking guests on a journey through the Hunter Valley and Orange wine regions and exploring just how beautifully contemporary NSW wines can work at the table.

Throughout the evening, Shannon will share the stories behind the wines, vineyards and varieties, along with insights into Tamburlaine’s approach to organic viticulture and winemaking.

It is a fitting collaboration for NSW Wine Month. Tamburlaine celebrates 60 years in 2026, with decades spent championing organic winegrowing in NSW, while Mélange was recognised with the 2025 NSW Sommelier Wine List Award for Best NSW Wine List in a Regional NSW Venue under 60 seats.

Guests will also have the opportunity to purchase favourite Tamburlaine wines from the evening at special event-only prices, with complimentary delivery.
